Cabbage and Sausage Skillet

Quick and easy cabbage and sausage skillet is the perfect healthy meal for any night of the week. Mix it up with your favorite vegetables or sauces!

Ingredients

  • 2 Tbsp avocado oil
  • 1 small yellow onion chopped
  • 4 cloves garlic minced
  • 1 small head green cabbage thinly sliced
  • 2 medium-sized carrots grated
  • 1 small red bell pepper chopped
  • 1 12-oz. package pre-cooked sausage, sliced*
  • ½ tsp sea salt to taste

  1. Heat the avocado oil in a large skillet (12-inch skillet recommended) over medium-high heat. Add the onion, sprinkle with sea salt, stir well, then cover. Cook, stirring occasionally, until the onion begins turning golden-brown, about 5 to 8 minutes.
  2. While the onion is cooking, chop the cabbage. Add the cabbage to the skillet, sprinkle with a little more sea salt, and cover. Cook, stirring occasionally, until the cabbage has wilted and turns bright green, about 5 to 8 minutes. The exact cooking time depends on how soft you like your veggies.
  3. While the cabbage is cooking, chop the remaining ingredients. Add them to the skillet and stir well. Cook, stirring occasionally, until the sausage has heated through and all of the veggies have reached your desired level of doneness, about 5 to 10 minutes.
  4. Taste for flavor and add more sea salt, a drizzle of liquid aminos or soy sauce, or hot sauce to your personal taste. Serve and enjoy! If you'd like additional sides to go with the meal, instant rice, brown rice, or cauliflower rice are great, as well as a green salad.

Notes

  • *I use mild Italian Chicken Sausage
  • Store any leftovers in an airtight container in the refrigerator for up to 5 days.
