Cabbage Salad

Ingredients

  • 3 cups green cabbage shredded
  • 3 cups red cabbage shredded
  • 1 carrot shaved with a peeler and chopped, large
For the dressing:
  • 1/4 cup apple cider vinegar
  • 1 tablespoon soy sauce (gluten-free if needed)
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon sesame oil
  • 1 1/2 teaspoons sugar
  • 2 tablespoons olive oil
  • salt to taste

Instructions

    Cup of Yum
  1. In a large bowl, stir the cabbage and carrots.
  2. In a medium, microwave safe bowl, mix the vinegar, soy sauce, mustard and sesame oil. Microwave for 15-20 seconds until warm. Stir in the sugar until dissolved.
  3. While constantly whisking, stream in the olive oil until thickened.
  4. Pour over the salad and mix
  5. Chill for 30 minutes (optional).
  6. Devour!
