Cabbage Soup

Cabbage Soup combines fresh vegetables like shredded cabbage, zucchini, carrots, mushrooms, and chickpeas simmered in tomato juice and broth for a hearty, brothy soup. The layered flavors from sautéed onions, garlic, and Italian seasoning create a soothing, savory taste. Simmering melds the textures into a tender, nourishing bowl suitable for a light meal or side dish. This soup offers a vegetable-forward option with balanced seasoning, appealing to those looking for a warming vegetable broth with added legumes.
