Cacik (Turkish Yogurt with Cucumbers)

Cacik is a Turkish yogurt-based dip or side made by combining thick yogurt with grated or finely chopped cucumbers and fresh herbs like mint and dill. Olive oil and dried mint add richness and aromatic depth. The dish can be adjusted for thickness by whisking in cold water and is traditionally served fresh to preserve cucumber crunch and yogurt texture.

Ingredients

  • 500 g yogurt thick strained or Greek yogurt
  • 2 cucumber or 1 large cucumber, small Turkish
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon mint finely chopped, fresh
  • 1 tablespoon dill finely chopped, fresh
  • ½ teaspoon dried mint
  • ¼ teaspoon salt

  1. Peel and grate the cucumbers with the large size of your grater. Alternatively, you can leave the skin or finely chop the cucumber for a crunchier texture.
  2. Add the fresh herbs and dried mint to the cucumbers.
  3. Whisk the yogurt, salt, and olive oil together to make a smooth mixture. 
  4. At this stage, if you want your cacik thin, more like a drink consistency, whisk in some cold water
  5. Add the cucumbers, dried mint, finely chopped fresh herbs to yogurt, and mix thoroughly until smooth.
  6. Transfer it to individual bowls and garnish it with some fresh herbs and extra virgin olive oil.

Notes

  • Use plain, natural yogurt to retain authentic flavor; avoid flavored or fruit yogurts.
  • Prepare cacik close to serving time to maintain cucumber crunch and prevent yogurt from releasing whey.
  • Adjust the consistency by adding cold water to the yogurt before mixing in cucumbers for a thinner texture.
  • Finely chopped cucumbers provide a crunchier texture compared to grated ones.
  • For a vegan version, substitute with a dairy-free yogurt alternative.
