Cafe Trứng

Café trứng (egg coffee) is a Vietnamese drink prepared with egg yolks, sugar, condensed milk and Robusta coffee.

Ingredients

  • 1 tablespoon ground Vietnamese coffee
  • 1 tablespoon condensed milk
  • 2 egg yolks
  • 1 teaspoon sugar
  • 1 teaspoon cocoa powder , optional

Instructions

  1. Rinse the filter and coffee cup with boiling water.
  2. Then pour the ground coffee into the filter and gently press the coffee using the back of a spoon to make the surface flat.
  3. Add 1 oz (30 ml) of boiling water and close the lid to steep for 2 minutes. Then add 1½ oz. (50 ml) of water to the filter and extract the coffee.
  4. Pour the coffee into a serving cup.
  5. Place the serving cup in a bowl of hot water at 200 F (90°C) to keep it warm.
  6. In a small mixing bowl, mix the egg yolks, sugar and condensed milk.
  7. Using an electric mixer, beat this mixture until obtaining a smooth, homogeneous, very creamy and velvety cream.
  8. Pour this whipped cream over the coffee in the serving cup.
  9. Wait 1 minute so that the egg cream is cooked using the hot coffee and the bowl of hot water.
  10. Sprinkle with a little cocoa powder (optional) before serving.
