Cajun Chicken Quesadillas

Ingredients

  • 4 flour tortilla wraps
  • large handful of grated cheese
  • handful of cooked chicken
  • ½ - 1 teaspoon Cajun Seasoning
  • 1 tomato
  • ½ small red onion
  • 1 chilli (red or green)
  • small handful fresh spinach
  • lime (to serve)

Instructions

  1. Place one tortilla into a dry frying pan. Spread over ¼ of the cheese.
  2. Add half the chicken and then sprinkle over the cajun spice mix.
  3. Cut the tomato into slices and add half of it to the tortilla.
  4. Finely slice the red onion and scatter over the tortilla
  5. Chop the chilli and sprinkle half over the tortilla.
  6. Top with some spinach leaves and another ¼ of the cheese.
  7. Place another tortilla on top and then place the frying pan over a medium/low heat.
  8. Cook the tortilla for 3 minutes until the cheese is starting to melt.
  9. Carefully use a fish slice to turn the tortilla and cook for a further 3-4 minutes until golden and the inside is melted.
  10. Repeat with the remaining ingredients.
  11. Serve cut into wedges with a slice of lime.
