Ingredients
- 2 Tablespoons butter
- 1 onion chopped
- 1 lb. chicken breast cubed
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 Tablespoons Cajun Seasoning
- 1 red pepper
- 1 Orange or Yellow Pepper
- (1) .5-ounce can chicken broth
- 1 1/2 cups heavy cream
- 1 cup Parmesan Cheese
- 1 lb. Pasta of Choice
- roma tomatoes diced (optional)
- parsley chopped as garnish (optional)
- pine nuts as garnish (optional)
Instructions
- Heat large skillet over medium heat. Melt butter.
- Add onion and saute for 3-4 minutes.
- Meanwhile, fill pot with water. Generously salt the water. Heat until boiling. Once boiling, add pasta and cook according to package instructions.
- Add chicken and peppers and cook for 7-8 minutes. Season with salt, pepper, and cajun seasoning.
- Add chicken broth and cook for several minutes.
- Add heavy cream and stir. Check for seasoning. Let cook over medium low heat until sauce starts to thicken.
- Toss with cooked, drained pasta. Top with parmesan cheese. Optional garnish: roma tomatoes, parsley, and pine nuts.
