Ingredients
- 1 pound potatoes cut into ¾-inch pieces, white
- 12 ounces andouille sausage sliced into rounds
- 1 yellow onion cut into 1-inch pieces, small
- 1 yellow bell pepper cut into 1-inch pieces
- 12 ounces Green bean trimmed and cut in half, fresh
- ¼ cup extra virgin olive oil
- 1 tablespoon Cajun seasoning
Instructions
- Season the ingredients. Preheat the oven to 400°F (200°C). Add the potatoes, sausage, onion, bell peppers, and green beans to a large mixing bowl. Add the olive oil, and Cajun seasoning, then toss to coat evenly.
