Cajun Shrimp Salad

Refreshing, crunchy, cool and with a hint of spice, this Cajun shrimp salad is the perfect weeknight dinner recipe! Fresh and light for summer.

Ingredients

  • 2 pounds Shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 2 teaspoons Cajun spice*
  • ¼ cup red onion finely diced
  • ¾ cup cucumber diced
  • 1 cup grape tomatoes halved
  • ½ cup parsley chopped
  • 1 avocado peeled pitted and chopped
  • 1 cup corn kernels cooked
  • 1 tablespoon lime juice
  • 1 tablespoon lemon juice
  • ¾ cup PLAIN yogurt
  • ½ teaspoon salt
  • ¼ teaspoon fresh ground black pepper
  • lettuce for serving

Instructions

  1. Preheat the oven to 400º Fahrenheit.
  2. Put the shrimp on a baking sheet in a single layer.
  3. Toss with the oil and seasonings.
  4. Bake for 7-10 minutes, until shrimp are opaque.
  5. Remove from the oven and set aside.
  6. In a small bowl mix together the lime juice, lemon juice, yoghurt, salt and pepper.
  7. Place the shrimp in a large bowl along with the red onion, cucumber, tomatoes, parsley, corn and avocado.
  8. Pour the yogurt mixture over the shrimp mixture and toss to coat.
  9. Serve over a bed of lettuce.
