Calamansi Juice (Filippino Lemonade)

Calamansi Juice is a refreshing Filipino lemonade made from freshly squeezed calamansi limes diluted with water and lightly sweetened with simple syrup. The drink is balanced between tart and sweet, and can be chilled or served over ice for a crisp thirst-quencher. Variations allow for alternative sweeteners or carbonation for different flavor profiles.

Ingredients

Simple Syrup
  • ½ Cup white sugar We won't need so much but extra can be stored in the fridge.
  • ½ Cup water
Calamansi Juice
  • 22 calamansi lime You want to get ⅓ freshly squeezed lime juice
  • ⅔ Cup water You can omit this but you will need a LOT more sugar to mellow out the sharpness of the juice! Substitute: sparkling water or 5 ice cubes (which you allow to melt into the juice)
  • ¼ Cup simple syrup Or to taste. It will taste nicer if you add more but I wanted the drink to be healthier!

Instructions

  1. Over medium or medium-low heat, stir the sugar into the water till dissolved. Be careful not to let burn. Transfer to another container so it can cool more quickly.
Lime Juice
  1. Wash the limes and cut in half.
  2. Squeeze the limes over a strainer to catch the seeds.
  3. Dilute with twice as much water as juice. (This ensures you still have good flavor but don't need to use so much sugar.)
  4. Stir in the simple syrup. Taste and add more if necessary.
  5. Recommended: add some ice cubes as the drink tastes amazing cold!

Notes

  • Simple syrup can be prepared ahead and stored in the fridge for later use.
  • Adjust sweetness with more or less simple syrup according to taste preferences.
  • For a different flavor, honey or ginger syrup can be used as alternative sweeteners.
  • Substitute sparkling water for still water to make a fizzy calamansi soda.
  • Consider blending lime rinds and straining for extra citrus aroma, if desired.
