California Avocado Skillet Chicken
California Avocado Skillet Chicken is marinated in honey balsamic and cooked in the skillet to tender and juicy perfection. Topped with ooey gooey cheese, tomato and avocado this will become a family favorite!
Ingredients
- ¾ cup balsamic vinegar
- ¼ cup honey
- 3 cloves garlic minced
- 2 teaspoons Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 chicken breast boneless skinless
- 4 lices mozzarella cheese
- 2 avocado diced
- 3 Roma tomato diced
- ¼ cup basil fresh, chopped

Instructions
- In a medium-sized bowl whisk the ¾ cup balsamic vinegar, ¼ cup honey, 3 cloves minced garlic, 2 teaspoons Italian seasoning, and ½ teaspoon salt, and ¼ teaspoon pepper. Reserve ¼ cup of the sauce for later.
- Add the 4 boneless skinless chicken breasts to the sauce and marinate for 30 minutes.
- In a medium-sized skillet over medium-high heat, add the chicken to the skillet and discard the marinade.
- Cook on each side for 3-4 minutes or until chicken is cooked to 165 degrees. Add the reserved ¼ cup of sauce and cook until it thickens.
- Top with 4 slices mozzarella cheese and 2 diced avocados, 3 diced Roma tomatoes, ¼ cup fresh chopped basil, and salt and pepper. Drizzle with balsamic vinegar and serve immediately.
