Camping Recipe: Skillet Baked French Toast

Ingredients

  • 6 egg lightly beaten
  • 12 ounces evaporated skim milk canned
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup brown sugar
  • 454 grams raisin bread loaf, thick sliced, crusts removed
  • 2-3 tablespoons butter diced
  • maple syrup

Instructions

  1. Whisk together the eggs, evaporated milk, cinnamon and brown sugar, making sure the brown sugar completely dissolves. 
  2. Dip each piece of raisin bread into the egg mixture, coating completely, then lay in the skillet. 
  3. Repeat with until you cover the bottom of the skillet completely, then use the remaining pieces of bread to form a second layer. 
  4. Continue the layers until the bread is used up (or you use up all the egg mixture). 
  5. Pour any remaining egg mixture on top then sprinkle with the diced butter.
  6. Bake in a 350 degree BBQ or trailer oven until the top is browned, around 35-40 minutes. 
  7. Cool slightly then enjoy!
