Candied Lemon Slices

Ingredients

  • 2 large lemons
  • 1 cup granulated sugar
  • 1 cup water

Instructions

  1. Wash the lemons thoroughly. Using a sharp knife, slice the lemons into 1/8-inch thick rounds, and remove seeds.
  2. In a large skillet, combine the sugar and water. Heat over medium heat, stirring until the sugar dissolves completely.
  3. Add the lemon slices to the skillet in a single layer. Simmer for 35-45 minutes, flipping occasionally, until the lemon slices are translucent and the rinds are soft.
  4. Carefully remove the lemon slices and let them rest on a wire rack for 24 hours. They will be sticky but should dry to a tacky texture.
