Candied Sweet Potatoes

Simply tasty candied sweet potatoes are caramelized in butter and brown sugar, making them a favorite side dish.

Ingredients

  • 2-3 sweet potatoes, peeled and cut into rounds
  • 2-3 tablespoons butter
  • ⅓ cup brown sugar
  • ½ cup water
  • salt and pepper to taste, (to taste)

Instructions

  1. Add all ingredients to a pan and bring to a boil.
  2. Turn heat down to low and simmer for 10-15 minutes without stirring.
  3. Cook on low for an additional 3-5 minutes stirring until potatoes are well coated.

Notes

  • How to store?
  • Store leftovers in an air-tight container in the refrigerator for 3-4 days. Reheat in the microwave or in a pot. Add a bit of butter and cook until heated through.
