Canned Corn Recipe with Peppers + Bacon

Ingredients

  • 2 trips Bacon chopped
  • ⅓ cup red pepper minced
  • ⅓ cup onion minced, yellow or red
  • 1 can corn about 15 ounces

Instructions

  1. In a medium skillet, cook bacon until crisp.
  2. Drain bacon grease, leaving 2 tablespoons in the pan.
  3. Add the onions and peppers, cook until translucent.
  4. Drain half of the liquid off of the canned corn.
  5. Add the corn and half the liquid into the pan with the onion and peppers.
  6. Cook until almost all the liquid is evaporated.
  7. Add bacon back into the pan. Stir to combine.

Notes

  • This canned corn recipe will change your entire perspective of this side dish. It's so simple and delicious that it will become a regular part of your meal plan. 
  • About 1 ½ cups of corn are 
  • Canned corn may contain more sodium than fresh or frozen corn, but the nutrients are comparable because of the preservation process.
  • Keep the leftovers from this recipe in an airtight container in the fridge for up to 4 or 5 days.

  • About 1 ½ cups of corn are packed into every 15-ounce sized can.  Just replace the ½ can of corn liquid with water (about ¼ cup) if you use a package of corn instead of a can.
