Caprese Bruschetta

Ingredients

  • 1 large baguette sliced Into 1.5-2 inch pieces
  • 16 ounces fresh mozzarella sliced
  • 1 ½ cups diced tomatoes
  • 3 Tablespoons fresh basil chopped
  • 2 shallots minced
  • 2 garlic cloves minced
  • 2 Tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 Tablespoons balsamic glaze

  1. Preheat your oven to 400°F (200°C). Place the sliced baguette pieces onto a baking sheet with parchment paper.
  2. In a large mixing bowl, add the diced tomatoes, basil, shallots, garlic, olive oil, and black pepper. Mix until well combined.
  3. Place 2 mozzarella slices onto each baguette piece. Bake the baguette pieces in the oven for 5 minutes, or until the mozzarella has melted and the bread is toasty.
  4. Remove the baguette pieces from the oven and top each with a heaping spoonful of the tomato mixture.
  5. Drizzle the balsamic glaze over top and enjoy!

Notes

  • This caprese bruschetta is best enjoyed fresh out of the oven when the bread is still warm and crispy.
  • To enhance the flavors, you can brush the baguette slices with olive oil before toasting them in the oven.
  • Feel free to adjust the amount of balsamic glaze according to your taste preference.
  • Can I use dried basil instead of fresh basil?
  • Fresh basil contributes a vibrant flavor to this dish. However, if you don’t have fresh basil on hand, you can substitute with dried basil. Use about 1 teaspoon of dried basil for this recipe.
