Caprese Chicken

Ingredients

  • 4 boneless skinless chicken breasts, about 3-4 pounds
  • 1 pint cherry tomatoes, halved
  • 2 tablespoons olive oil, divided
  • 4 lices buffalo mozzarella cheese, thick
  • ¼ cup fresh basil, chopped
  • 2 large garlic cloves, minced, about 2 teaspoons
  • Salt and pepper, to taste
  • Balsamic vinegar, to taste

Instructions

  1. In a large pan heat 1 tablespoon of the olive oil over medium-high heat.
  2. Season the chicken with salt and pepper and add them to the pan, cook for about 6-8 minutes on each side, until the chicken is cooked through.
  3. While the chicken is cooking add the remaining tablespoon of olive oil to a medium pan and cook the garlic over medium heat for just a minute.
  4. Add the halved cherry tomatoes and cook for 1-2 minutes until they start to wrinkle and the skin softens. Add chopped basil.
  5. Top the cooked chicken with mozzarella cheese and tomato mixture. Cover and cook until the cheese has, splash with balsamic vinegar and serve.
