Ingredients
- 4 boneless skinless chicken breasts, about 3-4 pounds
- 1 pint cherry tomatoes, halved
- 2 tablespoons olive oil, divided
- 4 lices buffalo mozzarella cheese, thick
- ¼ cup fresh basil, chopped
- 2 large garlic cloves, minced, about 2 teaspoons
- Salt and pepper, to taste
- Balsamic vinegar, to taste
Instructions
- In a large pan heat 1 tablespoon of the olive oil over medium-high heat.
- Season the chicken with salt and pepper and add them to the pan, cook for about 6-8 minutes on each side, until the chicken is cooked through.
- While the chicken is cooking add the remaining tablespoon of olive oil to a medium pan and cook the garlic over medium heat for just a minute.
- Add the halved cherry tomatoes and cook for 1-2 minutes until they start to wrinkle and the skin softens. Add chopped basil.
- Top the cooked chicken with mozzarella cheese and tomato mixture. Cover and cook until the cheese has, splash with balsamic vinegar and serve.
