Ingredients
- 1 pint cherry tomatoes cut in half
- 3 tablespoons heavy whipping cream
- ½ pound fresh mozzarella cheese sliced
- 6 fresh basil leaves plus more for garnish
- 1 garlic clove minced
- 1 tablespoon balsamic vinegar
Instructions
- Scoop out and discard pulp of cherry tomatoes. (I recommend using a small melon baller.)
- Invert tomatoes onto paper towels to drain while you make the filling.
- In a food processor, combine the cream, mozzarella cheese, basil and garlic; cover and process until blended
- Cut a small hole in the corner of a pastry or gallon ziploc bag. Transfer cheese mixture to the bag.
- Turn tomato halves over, and drizzle with balsamic vinegar.
- Pipe cheese mixture into tomatoes. Garnish with more chopped basil if desired.
- Refrigerate until serve.

- One pint of cherry tomatoes typically has 25 to 30 tomatoes, for 50 to 60 tomato bites.
