Caprese Tomato Bites

Ingredients

  • 1 pint cherry tomatoes cut in half
  • 3 tablespoons heavy whipping cream
  • ½ pound fresh mozzarella cheese sliced
  • 6 fresh basil leaves plus more for garnish
  • 1 garlic clove minced
  • 1 tablespoon balsamic vinegar

Instructions

  1. Scoop out and discard pulp of cherry tomatoes. (I recommend using a small melon baller.)
  2. Invert tomatoes onto paper towels to drain while you make the filling.
  3. In a food processor, combine the cream, mozzarella cheese, basil and garlic; cover and process until blended
  4. Cut a small hole in the corner of a pastry or gallon ziploc bag. Transfer cheese mixture to the bag.
  5. Turn tomato halves over, and drizzle with balsamic vinegar.
  6. Pipe cheese mixture into tomatoes. Garnish with more chopped basil if desired.
  7. Refrigerate until serve.

Notes

  • One pint of cherry tomatoes typically has 25 to 30 tomatoes, for 50 to 60  tomato bites.
