Caprese Veggie Burger Sliders

These flavorful veggie burgers combine garbanzo beans, tomatoes and basil, with chia and hemp seeds, for a healthy, vegetarian slider recipe.

Ingredients

  • 7.9 ounces Nature’s Path Qi’a Original Flavor
  • 14.5 ounce can diced tomatoes
  • 15 ounce can garbanzo beans drained and rinsed
  • 2 cloves garlic minced
  • ¼ cup fresh basil
Serve with:
  • 6 ounces fresh mozzarella cheese
  • 18 hawaiian rolls or lettuce wraps for gluten free
  • ¼ cup basil pesto

Instructions

  1. Place the Qi’a in a small bowl. Pour the tomatoes over the cereal and set it aside.
  2. Place the garbanzo beans in a food processor with the garlic and basil. Blend until all ingredients are combined well.
  3. In a large bowl, combine the tomato soaked Qi’a with the pureed garbanzo bean mixture and hand mix with a spoon.
  4. Form the mixture into 18 slider burger patties.
  5. Place on a greased grill pan or cast iron skillet on the stovetop over medium heat. Cook for 5-7 minutes per side.
  6. Before removing from the heat, place a small piece of mozzarella cheese on top of each slider. Allow to melt slightly, then place on a roll.
  7. Spread a spoonful of pesto on the top of the roll. Place the top roll on the slider and dig in.
