Ingredients

Graham Cracker Crust
  • 1 1/2 cups graham cracker crumbs , 12 full crackers
  • 1/3 cup sugar
  • 6 tablespoons butter unsalted, melted
Cheesecake Filling
  • 24 ounces cream cheese , softened (3 blocks)
  • 3/4 cup sugar
  • 3 large egg
  • 1/3 cup sour cream
  • 2 teaspoon vanilla extract
  • 3 apple peeled and chopped, Granny Smith variety
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
Crumb Topping
  • 1 cup flour
  • 1/2 cup light brown sugar
  • 3/4 cup old-fashioned oats
  • 1/2 cup butter room temperature, cut into pieces, unsalted
Caramel Topping
  • 1/2 cup heavy cream , at room temperature
  • 1 cup caramels

Instructions

  1. Preheat oven to 350 degrees and wrap a 9 inch springform pan in a large piece of foil.
  2. Fill a large pan with water.
  3. Mix the graham cracker crumbs, sugar, and melted butter together then press it into the springform pan in an even layer.
  4. To your stand mixer add the cream cheese and sugar on high speed until light and fluffy.
  5. Lower the speed to medium and add in the eggs, sour cream, and vanilla until smooth.
  6. Carefully spread the mixture on the crust.
  7. Mix apples, cinnamon, and nutmeg and spoon over the cheesecake filling.
  8. Add flour, brown sugar, oats, and diced butter to a bowl and mash it together.
  9. Sprinkle mixture over apples.
  10. Place the pan in the water bath and bake for 1 hour.
  11. Turn off the oven, open the door a couple of inches to let the heat out gently, and let cool for 1 hour then remove from the oven.
  12. Remove the foil.
  13. Add caramels and heavy cream to a microwave-safe bowl and melt on 50% power in 30-second increments until smooth and creamy.
  14. Drizzle over the cheesecake.
  15. Chill completely before serving.
