Caramel Apple Empanadas
These Caramel Apple Empanadas are the ultimate Fall treat! Fresh apples, cinnamon-sugar, and caramel are all wrapped up in a flaky pie crust for a totally indulgent dessert.
Ingredients
- 1 apple peeled and cut into 8 wedges, Granny Smith, large
- ¼ cup brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon lemon juice
- 1 pie crust premade
- 8 caramels unwrapped
- 1 egg yolk + 1 teaspoon water beaten for eggwash
- 2-3 tablespoons turbinado sugar
- caramel sauce optional, for drizzling
Instructions
- Preheat oven to 400 F, line a baking sheet with parchment and set aside
- Toss the apple wedges with the brown sugar, cinnamon, and lemon juice; set aside
- Cut the pie crust into 8 equal circles, place onto the baking sheet
- Add one piece of apple and top with one caramel to each pie dough circle
- Brush the edges with eggwash and fold the dough over the apple filling , use a fork to crimp shut
- Brush the outside with eggwash and sprinkle with turbinado sugar; use a fork to prick venting holes on top
- Bake in preheated oven 20 minutes, or until golden brown
- Remove from oven, allow to cool at least 5 minutes then drizzle with caramel sauce if desired
