Caramelized Onion and Swiss Cheese Twice Baked Potatoes

Ingredients

  • 2 Russet potatoes cleaned
  • 2-3 tsp olive oil
  • 1 sweet yellow onion sliced
  • Sea Salt and Freshly Cracked Pepper to taste
  • Splash of seasoned rice vinegar balsamic would work too
  • ¼ cup of sour cream
  • 1-2 tbsp of butter more if desired
  • Swish cheese shredded, to taste

Instructions

  1. Preheat the oven to 400 degrees.
  2. Wash the potatoes and poke a few holes in the potatoes with a fork or knife. Place into the oven and bake for 60 minutes, or until cooked through.  Remove from the oven and let them cool for 10 minutes.
  3. While the potatoes are baking, make the caramelized onions.  Place the oil into a skillet over medium heat.  Add the sliced onions and cook, stirring often, for 25-30 minutes, or until caramelized and golden brown. Side Note: If the skillet gets dry, add a tablespoon of water or two.  
  4. Season the onions with sea salt, to taste, and a splash of vinegar.  Remove from the skillet and set aside.
  5. Slice potatoes in half lengthwise and gently scoop out the flesh into a mixing bowl (set skins aside).
  6. Add sour cream,  butter, sea salt, and freshly cracked pepper, to taste, and mix thoroughly.
  7. Spoon the mixture into the potato skins, then top each potato with some of the caramelized onions and a sprinkling of shredded Swiss cheese.
  8. Place them back into the oven for a few minutes until the cheese has melted. Serve immediately. Enjoy.
