Caramelized Onions

A guide on how to caramelize onions at home. This recipe yields deep golden brown, flavorful caramelized onions.

Ingredients

  • 1-3 1-3 lbs onions
  • 2 2 Tablespoons butter or olive oil
  • 1 1 teaspoon table salt
  • 1 1 teaspoon granulated sugar optional
  • ½ ½ cup water, dry white wine, or chicken broth as needed

  1. Slice the onions. Cut onions in half, root to stem. Remove the outer, papery skin. Cut onions with the grain into thin (about ⅛") slices.
  2. Add the butter or oil to a large skillet or Dutch oven. Turn stovetop heat to medium.
  3. Once butter is melted or oil is shimmering, add onions, salt and sugar (if using).
  4. Cook, stirring occasionally (every few minutes), until onions begin to shrink and have reduced in volume some.
  5. Once onions are softened and reduced in volume, reduce heat to medium-low and continue to cook, stirring occasionally/as needed, until onions are deep golden brown in color and caramelized. If the onions begin to stick or burn to the pan, simply deglaze with a splash of broth, water, or wine.
  6. Use as desired.

Notes

  • The onions will shrink considerably as they cook. I find I need 2.5-3 lbs of onions for 1 cup of caramelized onions.
  • Store in an airtight container in the refrigerator for up to a week. They may also be frozen for several months.
