Instructions

Marinade:
    Cup of Yum
  1. Combine all of ingredients in a large zip lock bag; seal & shake well. Add the flank steak and seal.
  2. Marinate in the refrigerator 6-24 hours.
  3. Meanwhile, make the Guacamole (see recipe here), Roasted Tomato Salsa (see recipe here), Onion, Lime & Cilantro relish (see recipe here).
Tacos:
  1. Grill steak on a hot grill or in a grill pan over medium-high heat, for 4-5 minutes on each side, or until desired degree of doneness.
  2. LET THE MEAT REST FOR AT LEAST 10 MINUTES before slicing! Once the meat has cooled, slice ACROSS grain into small chunks.
  3. Cook tortillas over an open flame or in a (dry)hot pan for 45-60 seconds on each side. You want them warm, soft, & pliable.
  4. Top the warm tortilla with some meat, onion relish, salsa, guacamole, and cheese. Enjoy.
