Ingredients

  • 2 pounds beef stew meat cut into 1-inch cubes
  • 1 tablespoon vegetable oil
  • 1 large onion diced
  • 1 green bell pepper diced
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/4 cup all-purpose flour
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1/4 cup fresh cilantro chopped

  1. Heat the vegetable oil in a large pot over medium-high heat. Add the beef cubes and brown on all sides.
  2. Remove the beef and add the onion, bell pepper, and garlic. Sauté until the onions are translucent.
  3. Return the beef to the pot. Stir in cumin, chili powder, black pepper, and salt.
  4. Sprinkle flour over the meat and vegetables, stirring well to coat. Add beef broth and tomato paste, mixing well. Bring to a boil, then reduce heat and simmer covered for 1 hour 30 minutes or until the meat is tender. Serve and garnish with cilantro.
