Ingredients
for the pork-
- 3 lb Pork shoulder roast
- 1/2 onion chopped roughly
- 2 cups beef broth
- 2 cloves garlic smashed
- salt & pepper to taste
for the carolina bbq sauce-
- 1 1/4 cups yellow mustard
- 1 tablespoon butter
- 2 teaspoons hot sauce or more for spice
- 1/2 cup packed brown sugar
- 1/4 teaspoon chili powder
- 1/2 tablespoon molasses
- 1 teaspoon smoked paprika
- 1/2 tablespoon Worcestershire sauce
- 1/2 tablespoon white vinegar
- salt & pepper to taste
- Fritos scoops chips
- cilantro for garnish
Instructions
- Place all ingredients for the pork into a crockpot. Place the lid on and cook on high for 4 hours or until pork shreds easily with fork. Remove pork from crockpot and shred, discarding fat as you go.
- To make the carolina bbq sauce, place all ingredients into a saucepan and heat over medium, stirring as you go. Cook for 10 minutes and remove from heat. Pour half into the shredded pork and toss to coat.
- To assemble the Frito bites, place about 1 tablespoon of pork into each Frito scoop. Drizzle with more bbq sauce and top with cilantro. Serve immediately.
