Ingredients

  • 3 cups shredded carrots
  • 2 cups diced apples
  • 1/2 cup diced celery
  • 1/3 cup of golden raisins or regular raisins
  • 1/4 cup toasted chopped pecans
  • 1/2 cup plain greek yogurt
  • 1/4 teaspoon orange zest
  • 3 tablespoons fresh orange juice, about 1/2 of an orange
  • 1 tablespoon honey or maple syrup
  • 3/4 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. In a large bowl toss together the shredded carrots, apples, celery, raisins, and pecans. In a small bowl whisk together the dressing ingredients. Pour the dressing over the salad and mix until everything is coated.

Notes

  • This salad is best served and eaten in the same day.
  • If you are planning to make the salad in advance, wait to add the dressing and pecans.
