- 3 cups shredded carrots
- 2 cups diced apples
- 1/2 cup diced celery
- 1/3 cup of golden raisins or regular raisins
- 1/4 cup toasted chopped pecans
- 1/2 cup plain greek yogurt
- 1/4 teaspoon orange zest
- 3 tablespoons fresh orange juice, about 1/2 of an orange
- 1 tablespoon honey or maple syrup
- 3/4 teaspoon cinnamon
- Pinch of salt
Instructions
- In a large bowl toss together the shredded carrots, apples, celery, raisins, and pecans. In a small bowl whisk together the dressing ingredients. Pour the dressing over the salad and mix until everything is coated.
