Ingredients

For the baked oatmeal:
  • 2 cups old fashioned oats
  • 1 cup carrot 2 medium carrots, grated
  • 1/2 cup coconut shredded
  • 1/3 cup light brown sugar packed
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 2 cups almond milk or milk of your choice, unsweetened vanilla
  • 4 tablespoons unsalted butter melted and cooled to room temperature
  • 1 egg large
  • 2 teaspoons vanilla extract
  • 1/4 cup raisins optional
  • 1/3 cup pecans optional, or walnuts, chopped
For the maple cream cheese glaze:
  • 4 oz cream cheese at room temperature
  • 3 tablespoons pure maple syrup
  • ¼ teaspoon vanilla extract pure

  1. Preheat the oven to 350 degrees F. Grease an 8×8-inch baking pan with nonstick cooking spray and set aside.
  2. In a large bowl, mix together the oats, grated carrots, coconut, brown sugar, cinnamon, baking powder, ginger, salt, and nutmeg. Stir in the raisins, if using.
  3. In a medium bowl, whisk together the milk, melted butter, egg, and vanilla. Pour the wet ingredients over the oat mixture and stir until combined. Fold in the raisins and nuts, if using.
  4. Pour the mixture into the prepared pan. Bake for 40 minutes, until the top is golden and oatmeal is set.
  5. Meanwhile, make the cream cheese maple glaze. In a small bowl, use a spatula to combine the cream cheese, maple syrup, and vanilla. Once combined, switch to a whisk and whisk until smooth.
  6. Let the oatmeal cool for 5 minutes. Cut the baked oatmeal into squares and serve with a drizzle of maple cream cheese glaze.
