Carrot cake oatmeal with apple

Ingredients

  • ½ ½ cup gf oatmeal, old fashioned rolled oats preferably just rolled, not cut (50 gr)
  • ¼ ¼ apples
  • 1 1 cup water
  • 3 3 dates
  • ½ ½ cup carrots grated (50 gr)
  • extra extra cinnamon
  • ¾ ¾ apples
  • 1 1 tbsp maple syrup
  • 1 1 tbsp maple syrup
  • 1 1 tsp cinnamon
  • 1 1 tsp Bourbon vanilla powder or extract or paste
  • celtic sea salt to taste

Instructions

  1. Combine the carrots, oats and water and bring to a soft boil.
  2. If you like the carrots a quite softtened let it simmer for 15 minutes with the lid on. Otherwise just cook until the oats and water form a porridge. That will take about 5 minutes.
  3. Add the maple syrup, cinnamon, vanille and salt (if you use that).
  4. Turn the heat low. Wash the apple and cut about half or three quarter in small pieces. Add to the porridge en stir.
  5. Cut the rest of the apple in bigger chunks. Cut the dates in pieces.
  6. Poor the porridge into a bowl. Top with the apple chunks and dates. Sprinkle some extra cinnamon on top. Add an extra tablespoon of maple syrup on top.
