Ingredients

  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup vegetable oil
  • 3 egg large
  • 2 cups carrot shredded
  • 1 apple peeled and shredded, large
  • 1/2 cup raisins

  1. Preheat your oven to 375°F. Grease or line muffin tins with paper liners.
  2. In a large mixing bowl, whisk together the flour, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the sugar, vegetable oil, and eggs until well combined.
  4. Pour the wet ingredients into the dry and stir just until combined, being careful not to overmix.
  5. Gently fold in the shredded carrots, apple, and raisins into the batter.
  6. Evenly divide the batter among the prepared muffin cups, filling each about 3/4 full.
  7. Bake in the preheated oven for 25 to 30 minutes, or until the tops are golden and a toothpick inserted into the center of a muffin comes out clean.
