Ingredients

  • 1 lb carrot
  • 1 clove garlic minced
Carrot Salad Dressing
  • 5 Tablespoon olive oil
  • 2 Tablespoon apple cider vinegar
  • 1 Tablespoon honey
  • ½ teaspoon ground coriander
  • black pepper to taste
  • salt to taste
  • parsley chopped, fresh

Instructions

  1. Prepare the Carrots: Peel and shred the carrots using the large shredding holes on a grater, then place them in a large mixing bowl. Add the minced garlic to the carrots.
  2. Make the Dressing: In a small bowl, whisk together all the salad dressing ingredients until well combined.
  3. Combine the Salad: Pour the dressing over the carrots and garlic. Toss everything together until evenly coated. Taste and adjust with additional salt and pepper, if needed.
  4. Finish and Serve: Sprinkle the salad with chopped fresh parsley. Serve cold, or let it sit in the fridge for 1 hour to allow the flavors to meld for an even better taste.
