Ingredients
- 2 Tablespoons olive oil
- 2 Tablespoons freshly squeezed lemon juice I used Meyer lemons
- 1 clove garlic minced
- 3/4 teaspoon ground coriander
- 1/8 teaspoon ground cinnamon
- 1/2 teaspoon smoked paprika
- 1/2 fresh jalapeño pepper seeded and very thinly sliced
- 1/2 teaspoon kosher salt
- 2 1/2 cups grated carrots
- 1/2 cup fresh cilantro
Instructions
- Whisk together the olive oil, lemon juice, garlic, coriander, cinnamon, paprika, jalepeno, and salt.
- Toss the dressing with grated carrots and cilantro.
- Serve at once.

- This salad can be made one day in advance. Ashley recommends adding the cilantro just before serving.
