Ingredients

  • 3 tablespoons butter
  • 1 pound carrots chopped
  • 1 cup onion chopped
  • 1 cup celery chopped
  • 6 cups chicken broth or veggie
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 prigs thyme fresh
  • 1 cup heavy cream

Instructions

  1. Add the butter to the Instant Pot and turn it onto saute mode for 10 minutes. This will give you enough time to complete the saute steps.
  2. When the butter is melted, add the carrots, onion, celery, salt, and pepper.
  3. Saute until the onions are softened, about 5 minutes.
  4. Add the broth, cream, and thyme.
  5. Press cancel to end saute mode.
  6. Cook the soup on manual high pressure for 3 minutes.
  7. Let the Instant Pot naturally release pressure, the soup will come out the vent if you quick release the pressure.
  8. Once the pressure is released, blend the soup in a blender (be careful, hot liquids expand!) or with an immersion blender.
