Carrots and Hummus

Carrots and Hummus are a great budget friendly snack that is easy to make and incredibly cheap.

Ingredients

  • 1 can garbanzo beans
  • 2 tbsp Tahini
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp cumin
  • salt to taste
  • 2 lbs carrots

Instructions

For the Hummus

  1. If you are using a food processor to make your hummus, dump all of the ingredients into the bowl and include about ¼ of the liquid that was in the can with the chickpeas. Blitz the ingredients until smooth.
  2. If you need to make the hummus by hand, drain all of the liquid away from the chickpeas and dump them into a bowl. Using the back of a fork, mash the chickpeas into a paste. Add the remainder of the ingredients and continue mashing until as smooth as you can get it.
  3. Wash and peel the carrots and store in water in a container and place into the fridge.
  4. This recipe makes 5 servings. That will be roughly 2-3 carrots and 80g of hummus.
