Ingredients

  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 1/4 cup soy sauce low-sodium
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 3/4 cup cashews unsalted
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 1 clove garlic minced
  • 1 onion diced, small
  • 1 red bell pepper diced
  • 2 green onions sliced

Instructions

  1. In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and sesame oil. Set aside.
  2. Toss chicken pieces with cornstarch until evenly coated. Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook until browned and almost cooked through, about 5 minutes.
  3. Add garlic, onion, and bell pepper to the skillet with the chicken and cook for 2 minutes.
  4. Pour the sauce over the chicken and vegetables, stirring to combine. Continue cooking until the sauce is heated through, the vegetables are tender, and the chicken is 165°F internally.
  5. Stir in cashews and green onions just before serving.
