Ingredients
Rum Syrup
- 40 gms water 1.4 oz
- 35 gms sugar 1.25 oz
- 40 gms rum if your Rum is about 40% alcohol, 1.4 oz
Marzipan
- 50 gms almond meal 1.75 oz
- 50 gms icing sugar 1.75 oz
- almond extract a few drops
- Liquid food coloring green
- water little
Sweet Ricotta Filling
- 800 gms ricotta cheese traditionally sheep’s milk ricotta, but I cannot fnd it here!, 1.75 lbs
- 480 gms granulated sugar 1 lb
- 70 gms dark chocolate chips 2.5 oz
Assembling the Cassata
- 1 sponge cake sliced horizontally into 3 discs, 24 cm / 9.5 inch
- 100 gms marzipan green, 3.5 oz
- Rum syrup
- ricotta cheese sweet filling
Decoration
- dark chocolate glaze made with 300 gms – 10.5 oz. icing sugar and a little water
- royal icing
- candied fruits cherries, red and green pears, half a mandarin, zuccata – Sicilian candied pumpkin
