Cauliflower Cheese Soup

This creamy, dreamy Cauliflower Cheese Soup recipe is serious comfort food, and as a bonus - it comes with a dose of vegetables!  Done in under 30 minutes, it's a cheesy, family-friendly hearty soup, perfect for cold days when all you want is a hot bowl of something good!

Ingredients

  • 2 teaspoons butter
  • 1 large onion chopped finely
  • 1 large cauliflower cut into florets
  • 1 large potato peeled and diced
  • 3 cups chicken stock or vege
  • 1 2/3 cup milk I used 2%
  • 3.5 ounces cheddar cheese grated
  • salt & pepper

Instructions

  1. Melt butter and sauté onion until soft (5 mins).
  2. Add cauliflower, potato, stock, milk and seasoning.  Bring to boil and simmer for 30 minutes.
  3. Using a stick blender, blend until smooth adding a little more milk if it is too thick.
  4. Cool to freeze, or stir in cheese just before serving.
If freezing
  1. Thaw, then warm on stove or microwave until heated through. Stir cheese in just before serving.
