Cauliflower Chicken Fried Rice

This twist on an old favorite is low carb and just as delicious! We swapped the rice out for Cauliflower rice in this Cauliflower Fried Rice with Chicken. It's still full of flavor and leaves you full. It's the perfect healthy dinner for when you are low on time!

Ingredients

  • 2 Tbsp sesame oil divided
  • 1 lb boneless skinless chicken breasts cut into 1'' pieces
  • 2 c. peas and carrots frozen
  • 2 cloves garlic
  • 2 eggs beaten
  • 2 Tbsp soy sauce low sodium
  • 1 head cauliflower riced
  • 1 green onion minced

Instructions

  1. Heat 1 Tbsp sesame oil over medium low heat. Add chicken, garlic and carrots and peas. Cook until chicken is cooked through and carrots and peas are tender. 
  2. Add the rest of the sesame oil and rice cauliflower. Stir fry. Watch this carefully so the cauliflower does not get mushy. 
  3. Make well in the middle of the cauliflower mixture. Turn heat down and add eggs. Stir gently until eggs are fluffy and cooked. Stir in soy sauce. 
  4. Top with green onions and serve immediately.

Notes

  • I sometimes add 1 c. prepared brown rice to this to have the "real" rice in there for texture. Just add this with the rice cauliflower. If you are not on a true low carb diet this helps beef this meal up a little!
