Cavolo Nero Recipe

Ingredients

  • 250 g Cavolo Nero or black kale leaves stalks removed
  • ¼ cup olive oil plus extra
  • 1 pinch dried chili flakes or 1 whole chilli finely sliced
  • 2 cloves garlic finely chopped
  • 3 anchovies qood qulaity canned
  • ½ cup water optional
  • salt and pepper to taste

Instructions

  1. Place the Cavolo Nero leaves in a pot of boiling water. Cook for 5 minutes and drain. Squeeze out all the excess water.
  2. In a non stick or cast iron pan heat up some virgin olive oil, turn the heat to medium and add the garlic, chili flakes and anchovies.
  3. Give everything a good stir and let it cook for a few minutes.
  4. Add the “just blanched” Cavolo Nero leaves and stir everything again and cook for a further 5 minutes until tender and glossy.
  5. Season with salt and pepper and serve immediately.
