Ceviche

Fresh Seafood Ceviche is a classic South American dish made with shrimp, scallops, fish, tomatoes, jalapeno, avocado and a citrus marinade.

Ingredients

  • 1 pound sea bass , cut into 1/2" chunks
  • 1/2 pound scallops , cut into 1/2" chunks
  • 1/2 pound Shrimp , cut into 1/2" chunks
  • 1 cup lime juice
  • 1/2 cup lemon juice
  • 2 roma tomatoes , seeded and cut into 1/2" chunks
  • 1 Jalapeño , deseeded and minced
  • 1/2 white onion , minced
  • 2 cloves garlic , minced
  • 1 avocado
  • 1/4 cup cilantro , minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper

Instructions

  1. Add the sea bass, scallops and shrimp to a large glass bowl.
  2. Add in the lime juice and lemon juice and stir to coat.
  3. Let sit for 10 minutes.
  4. Add in the tomatoes, jalapeno, onion, garlic, salt and pepper; stirring well.
  5. Cover and refrigerate for 20 minutes until the shrimp is pink.
  6. Dice the avocado into chunks when you remove the mixture from the fridge.
  7. Add in avocado and cilantro, stir and serve on dried tostada rounds.
