Cheddar Roasted Cauliflower
This easy to make Cheddar Roasted Cauliflower combines tender cauliflower florets with a rich cheddar cheese sauce.
Ingredients
For the Cauliflower
- 1 cauliflower cut into florets, head
- ½ cup cheddar cheese shredded
- 2 tablespoons olive oil
- 1 teaspoon garlic salt
- ¼ teaspoon black pepper ground
For the Cheese Sauce
- 1 ½ cups cheddar cheese shredded
- 1 cup heavy cream
- ½ cup cream cheese
- 1 tablespoon butter
- ½ teaspoon garlic salt
- ¼ teaspoon black pepper ground
Instructions
- Preheat oven to 425°F
- Wash, dry and cut up the cauliflower into bite size florets. Pour the florets out onto a baking sheet.
- Sprinkle the tops with the olive oil, garlic salt and ground black pepper.
- Toss to combine, then roast in the oven for 20 minutes while you make the cheese sauce.
- Heat a saucepan to medium and add in the butter, then once melted pour in the heavy cream and cream cheese.
- Stir until the cream cheese has melted, then add in the 1 ½ cups of cheddar cheese, garlic salt and ground black pepper.
- Simmer for 3-5 minutes or until the cheese has melted and the sauce has thickened.
- Transfer the roasted cauliflower into a mixing bowl and pour the cheese sauce over the top.
- Toss to combine, then pour the mixture into a 9 x 13 casserole baking dish that’s been sprayed with olive oil.
- Top with the remaining ½ cup of shredded cheddar cheese and bake 12-15 minutes or until golden.
