For Batter
- 1.25 cups gram flour (besan)
- 1 pinch baking soda
- ½ teaspoon carom seeds (ajwain)
- 1 teaspoon red chili powder
- ½ teaspoon garam masala
- ¼ teaspoon ginger garlic paste - optional
- salt as required
- water - for making the batter, add as required
For Spiced Cheese Filling

- 1 to 2 green chilies - chopped finely
- 1 teaspoon ginger - grated or minced or finely chopped
More Ingredients
- 6 to 8 lices bread - white bread or brown bread or whole wheat bread
- neutral cooking oil as needed, for deep frying or shallow frying, generic cooking oil
Instructions
Making batter
- First of all make a batter of besan, the ground spice powders, baking soda, carom seeds, salt with water.
- Begin with stirring all the dry ingredients and mixing them well in a bowl.
- Add water as required. Mix with a wired whisk to make a medium consistency batter without any lumps.
- The batter consistency should not be too thick nor too thin.
- Add a few drops of oil to it and mix again. Set aside
Making cheese stuffing
- Grate some cubes or a block of proceeded cheese to get 1 cup of it.
- Take the grated cheese in a bowl. Add the finely chopped green chilies and grated ginger to the grated cheese. Mix well and set aside.
Assemble
- Now cut the bread slices into two rectangles or triangles.
- Evenly spread the grated cheese mixture on the bread slice.
- Cover this cheese topped slice of bread with another bread slice.
- Ensure that the cheese is evenly spread inside the bread slices. Repeat the same with the rest of bread slices.
- Now take the cheese stuffed bread and dip it in the gram flour batter to coat it evenly with the batter.Make sure not to keep the bread in the batter for a long time as the bread becomes soggy and breaks.
- The batter has to coat all the sides of the cheese stuffed bread. If not then the cheese will melt while frying and leak into the oil.
Making cheese bread pakoda
- Deep fry or shallow fry the bread cheese pakora in medium hot oil.
- Once crisp and golden on top, flip the pakoda and fry till golden. Flip a few times if needed for even frying of the pakora.
- Drain pakoras on kitchen paper towels to remove excess oil.
- Serve Cheese Bread Pakoda hot with green chutney or tomato ketchup.
- The fun is in eating the pakoras hot as you feel on your palate, the melted cheese with the outer crispy layer. The pakoras are crisp from outside but soft from within.
Notes
- You can also add ginger garlic paste to the batter.
- You can also add ginger garlic paste to the batter.
- For the cheese filling, as an option, add some mixed herbs or chilli flakes or black pepper powder.
- I have shallow fried but you can also deep fry the pakoras.
- Make sure that the oil is moderately hot while frying. It should not have a warm temperature or be extremely hot.
- You could make the pakoras with cheddar or mozzarella or using equal portions of both. I have made them with processed cheese.
