Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 4 tablespoons butter cold and cubed, unsalted
  • 8 ounces cheddar cheese finely grated, sharp
  • 2-3 tablespoons water cold

Instructions

  1. In a food processor, combine the flour and salt.
  2. Add the cold, cubed butter and grated cheddar cheese to the appliance. Pulse until the mixture is coarse and crumbly.
  3. Gradually add cold water, one tablespoon at a time, pulsing after each addition until the dough comes together but isn't too wet.
  4. Wrap the dough in plastic wrap. Refrigerate for at least 30 minutes.
  5. Roll the dough 1/8 inch thick on a lightly floured surface. Cut into 1-inch squares and spread them out on a baking sheet lined with parchment paper.
  6. Bake in a preheated oven at 350°F for 18-20 minutes or until the edges are golden brown. Turn the tray halfway through baking if needed.
