Cheese Quesadilla

Easy Cheese Quesadillas are great as a snack or quick lunch! Perfectly crispy tortillas stuffed with gooey cheese with just 2 ingredients!

Ingredients

  • 4 tortillas , burrito sized
  • 2 cups Mexican blend cheese , shredded
  • 2 tablespoons vegetable oil

Instructions

    Cup of Yum
  1. Heat a large heavy skillet on medium-low heat.
  2. Using a brush, brush oil onto your skillet and add a tortilla.
  3. Top with 1 cup of cheese in an even layer.
  4. Top with second tortilla.
  5. Brush the tortilla top with oil.
  6. Press down gently with spatula.
  7. Let cook for 3-4 minutes until the tortilla starts to brown.
  8. Carefully flip the quesadilla.
  9. Cook the second side for 3-4 minutes.
  10. Remove from the pan and place on a cutting board.
  11. Cut with a large sharp knife or a pizza cutter.
  12. Serve with salsa, sour cream and guacamole.
