Cheesecake Bars Recipe

Cheesecake bars are an easy way to make a cheesecake for a crowd! Creamy and smooth, they pair great with anything.

Ingredients

For the Crust
  • 12 Graham crackers
  • 6 tablespoons butter
  • ⅛ teaspoon salt
For the Cheesecake
  • 16 ounces cream cheese 2 packages
  • ¾ cup sugar
  • ⅔ cup Greek yogurt plain or vanilla flavored
  • 4 eggs large
  • 1 tablespoon vanilla extract

Instructions

For the Crust

  1. Preheat oven to 350ºF.
  2. Crush the crackers until smooth. You can do this in a food processor or in a zipper top bag with a rolling pin.
  3. Add the melted butter and mix until well distrubuted.
  4. Press into the bottom of a greased 9x13 baking dish.
  5. Bake for 10 minutes.
For the Cheesecake
  1. Whip the cream cheese until it is well combined and smooth.
  2. Whisk in the sugar.
  3. Whisk the eggs in, one at a time, until well combined.
  4. Add the greek yogurt and vanilla. Whip together until well combined.
  5. Pour the filling into the baked crust. Smooth out the filling so it is evenly distributed.
  6. Bake for 50-60 minutes, or until the center registers 160ºF on an instant read thermometer.
