Ingredients
- 2 cups heavy cream
- 14 ounces sweetened condensed milk (1 can)
- 2 ounces cream cheese room temperature (¼ block)
- 1 teaspoon pure vanilla extract
- ½ cup crushed graham crackers
Instructions
- In the bowl of a stand mixer fitted with the whisk attachment, beat the heavy cream, starting on low speed and gradually working up to high speed, until it becomes thick and forms stiff peaks.
- Add the sweetened condensed milk, cream cheese, and vanilla extract and fold them into the cream gently-- you don’t want to deflate the whipped cream.
- Fold in the graham crackers.
- Transfer the mixture to a loaf pan or silicone ice cream tub and wrap it tightly with plastic wrap.
- Place it in the freezer for at least 12 hours, preferably overnight.
- Scoop and serve with your choice of toppings.

Notes
- Storage: Store cheesecake ice cream in an airtight container in the freezer for up to 1 week.
- If you don’t have a silicone ice cream tube to use, you can always use a loaf pan to shape your ice cream.
- Add different extras to your ice cream if you’d like, such as chopped nuts, chocolate syrup, and sprinkles.
