Ingredients
- 2 pounds chicken breasts approximately 4 chicken breasts
- 6 slices Bacon cooked and chopped
- 7 ounces quartered artichoke hearts drained and chopped
- 1 ounce fresh baby spinach chopped
- 1/4 c mayonnaise
- 2 ounces cream cheese softened
- 5 ounces smoked gouda finely chopped or shredded
- 3 ounces Havarti or Gruyere finely chopped or shredded
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions
- Preheat oven to 400 degrees F.
- Place a chicken breast on a cutting board and press your hand on it holding it firmly in place. Use a sharp knife parallel to the cutting board to cut through the chicken horizontally creating two thin slices. Repeat this step for each of the chicken breasts.
- Combine all of the ingredients except the chicken in a bowl and stir together.
- Place 4 thin chicken breast halves in a greased baking dish. Sprinkle with 1/2 teaspoon of salt.
- Spread half of the cheese mixture over the chicken.
- Place the remaining 4 chicken breast halves on top of the cheese mixture.
- Top with the remaining cheese mixture.
- Cover the dish with foil and bake at 400 degrees F for 30 minutes.
- Remove the foil and continue to bake for 10 minutes or until chicken is cooked to an internal temperature of 165 degrees F.
