Ingredients

  • 8 ounces Bacon
  • 1 medium onion chopped
  • 1 Jalapeño finely diced
  • 2 pounds hashbrowns thawed
  • 2 cups sour cream
  • 2 cup cheddar cheese shredded, divided
  • 10.5 ounces cream of chicken soup
  • ¼ cup butter melted
  • 1 teaspoon salt
  • ½ teaspoon pepper

  1. Preheat oven to 350 degrees F.
  2. In a saute pan over medium-high heat, cook the bacon for 6-8 minutes until crispy. Remove the bacon from the pan. Once cool enough to handle, chopped bacon into 1/2-inch pieces.
  3. Using the bacon grease in the pan saute the onions and jalapenos for 3-4 minutes until the onions are translucent.
  4. Set aside 1/2 cup of cheddar cheese and half of the cooked bacon.
  5. In a large bowl, mix together the hash browns, sour cream, cream of chicken soup, butter, salt, pepper, onions, jalapeno, 1 1/2 cups cheese, and half of the bacon.
  6. Coat the inside of a 9-inch x 13-inch pan with non-stick cooking spray and fill with hash brown mixture.
  7. Bake at 350 degrees F for one hour. Top with remaining cheese and bacon and bake an additional 15 minutes. Serve immediately.
