Cheesy Chicken and Spinach Fritters
Craving a cheesy low-carb treat that you can make in 30 minutes or less? If so, you need to try these Cheesy Chicken and Spinach Fritters. They're tender and cheesy on the inside, and crispy on the outside.
Ingredients
- 1 lb chicken breast cut into tiny pieces
- 2 cups spinach fresh
- 2 egg
- 1/2 cup flour
- 1/4 cup mozzarella cheese
- 1/4 cup Parmesan Cheese
- 2 garlic cloves, minced
- 3 tbsp neutral cooking oil generic cooking oil
- 1 tsp black pepper
- salt to taste
- 2 tbsp green onion chopped
Instructions
- Heat a skillet and add a teaspoon of oil. Add the spinach and cook until the spinach has wilted.
- In a medium bowl add the cooked spinach along with the chicken pieces, eggs, flour, mozzarella cheese, parmesan cheese, garlic, pepper, green onions, and salt. Mix it well.
- To a wide skillet add the remaining oil; add around 2 tablespoons of the prepared fritters mixture and pat down evenly. Cook for 2-3 minutes per side and flip to the next side and cook until golden. Repeat the same with the remaining mixture and work on batches.
- Transfer the cooked fritters to a plate and serve along with the ketchup or mayonnaise.
