Cheesy egg bagel breakfast sandwich

This cheesy bagel breakfast sandwich with spinach and eggs is the perfect, easy breakfast recipe that takes only a few minutes to make.

Ingredients

  • 6 eggs
  • 4 tbsp milk/cream
  • 1-2 tsp salt to taste
  • ½ tsp black pepper
  • 1 tbsp butter
  • 2-3 cups baby spinach
  • 2 bagels halved
  • 1 cup grated cheese (or 4 slices of American cheese)

Instructions

  1. In a medium bowl, whisk together the eggs, milk/cream, salt and pepper.
  2. Heat a large frying pan over medium heat then melt the butter.
  3. Add the spinach and allow to wilt then pour in the eggs.
  4. Scramble gently, allowing a loose omelette to form.
  5. Once the eggs are almost cooked, add the cheese then allow to melt.
  6. While the eggs are cooking, toast the bagel.
  7. To serve, transfer the eggs to the bagel and add more fresh spinach or cheese (optional).
  8. Serve immediately.
